Ah yes...oysters. Now it might seem odd to think that you can find oysters in the forest. That is until I expand it to oyster mushrooms. I was having a nice hike in the woods by my house and as I was about to exit the forest, these fun dudes yelled out at me. I stopped and went over. After a nice heart to heart conversation, I took them home and ate them. I must say...I can't do that with my human friends.
Oyster mushrooms are a delicacy and can be found in some markets and on some menus. They appear in summer and fall, with slight color variations depending on when you find them. The oyster mushroom is one of the few known carnivorous mushrooms, feasting on nematodes...yum. When cooked up with some olive oil and a pinch of salt, they taste superb (the mushrooms, not the nematodes). Oyster mushrooms are and can be cultivated like the shitake mushroom and the many varieties of Agaricus bisporus (crimini, portabella, white button mushroom). It is also commonly found in the wild, which if you are on a tight budget like me...
